Eating well… can you do it, single mom?
I picked up a copy of October’s issue of Eating Well. I couldn’t resist. With headlines like “28 Healthy in a Hurry Recipes” and “Delicious One-Skillet Suppers”, what’s not to love? 
How about “Glorious Broccoli”? We all know the trick of sprinkling some grated cheese over hot broccoli, but don’t you want the recipe for broccoli, cheddar and white bean soup?
There’s also a great article on how to eat around allergies, an issue that gets more and more troublesome… Did you know, my four year old son’s school can’t serve snacks anymore, for fear of allergies and the litigious society we live in today? Which means a whole bunch of little kids have to go from 11:30 in the morning when lunch is served all the way to the final bell at 3:15? This article has a great cheat sheet of common hidden sources of allergens (did you know there might be eggs in your ice cream?) and good substitutes for common snacks?
For the price of that tuna salad I bought for lunch today, I’ve got a magazine chock full of recipes I can’t wait to try.
