In honor of the 4th and single moms who have no time to prepare
I give you the world’s best dessert.
You’re going to a barbeque tomorrow, right? Most of the United States is, and if you’re reading along in South Africa or the UAE or the UK or any of the amazing places this blog travels, I recommend you fire up the bar-b and play along at home.
If you have an old cookie sheet, one with edges, not one of the new-fangled flat sheets, go ahead and dedicate it to this dessert.
Clean and slice a ripe pineapple into 1″ rounds. Cut in half and remove the pit of as many peaches, nectarines, plums, and whatever other fleshy fruit you might want to try. Arrange them on your cookie sheet so that the fruits do not touch. Place small pats of butter on the pineapple and in the cup formed by the pit of your other fruits. Sprinkle brown sugar all over everything — a little bit is more than enough, but you go ahead and sprinkle away.
When the main course is done on the grill, place your sheet on the dying coals. Allow to cook until the fruit is tender and the butter and sugar have caramelized slightly. Put the fruit in bowls with vanilla ice cream and drizzle the pan juices over the whole thing.
What could be simpler?
