pancakes for dinner

Breakfast in our house is a hurried affair — whatever healthy muffin we can grab, a candy juice, a peanut-butter and jelly English muffin sandwich. The King of Everything and I are greatly enamoured of breakfast, though, and will lounge around in our jammies all morning long on the weekend with an indolent breakfast of eggs and waffles and bacon oh my!

Which doesn’t quite satisfy our longings during the week. So several times a week, we’ll eat breakfast for dinner. I’ll start with a whole wheat pancake mix, say, and add in some yogurt with the milk, or buttermilk, and a little bit of oat bran or wheat germ for an extra protein punch. We’ll eat fritattas loaded with cheese and vegetables, or hearty omelets. Waffles. Bacon or sausage. Juice and a cold glass of milk. Fresh fruit and berries. Dippy eggs or eggy windowpanes, with the egg cooked into a round hole cut into a piece of toast.

It’s fun to do things out of order. I remember the best mornings were apple pie mornings in my house, when my mom would serve up warmed, home-made apple pie in a bowl with fresh cream and cinnamon over it.

Last night, the KoE wanted to do dinner for breakfast. We thought and thought, but couldn’t think of what we’d like to eat in the morning. I thought about pizza for breakfast, but didn’t suggest it to him. He’ll figure that one out when he’s in high school.
