Solo Mother

taking a grown-up moment

img-0246.jpg I’m having a friend over for dinner tomorrow night. A grown up. I can’t remember the last time I invited someone over for dinner… I’m so excited! I have no idea what to make, but I’ve roasted some acorn squash that I’ll stuff with a wild rice mixture. Haricots verts. Either fish or chicken, depending on what looks good at the market. Some white wine. Some good cheese.

It’s hard to be a single mom (I know, I know, how many times have I said that?). All my friends are so busy, it’s impossible to get together. They don’t want to always come to my house. I don’t blame them–sometimes, I don’t want to come to my house, either.

A few hours of adult-ness in the comfort of my own home. That I have to clean.

    That sounds like fun. I miss all my dinner friends in NM. Since I moved to WA I’ve barely been going out and it’s lame. This is a good reminder that I should. But you’re right everyone is sooooo busy. :( I do hope you have fun and I love acorn squash so that sound good to me. I also like rice with apricots and marigolds.

    one thing that reminds me my husband is a keeper is his cooking, and it’s also a pretty quick way for him to get himself out of trouble. :)

    I don’t do fancy dinners, so I don’t really know what my favorite fancy dinner is. I do love it when he makes a good steak though…

    I like to roast a chicken in my convection oven. A few years ago I took an impromptu telephone tutorial from one of the tester chefs at Dacor and she gave me good pointers. I cut up root vegetables (carrots, turnips, potatoes, onions, whatever) into big chunks and dump them in the roaster. The chicken perches on top of them so it cooks by convection while the vegetables roast. You can’t stuff the vegetables in the chicken because the convection needs to blow through the bird, but I always put one cut up apple inside it.

    My repertoire of fancy meals has really plummeted since becoming a single mom…and my standards for “fancy” have too! One dish I can reliably find time to make for friends is my famous seafood chowder. I’m originally from Maine so I’ve been perfecting it using the seafood available down here on the Gulf coast now. I serve it in scooped-out sourdough bowls, with a salad of spring greens & grape tomatoes, etc. and everyone always raves about it. But it’s so incredibly easy to make.
