What to eat when you’re too tired to cook

If you’re like me, you have certain staples in  your fridge, ready to go. Like pasta and brown rice.

This is a very tasty, quick, easy little dish that takes minutes in the microwave, and puts the taste back in tastebuds. Plus, it’s got a nice little pickmeup, thanks to the complex carbs and the iron and calcium…

Spinach Rice Bowl

Microwave about a half cup of frozen spinach until hot, drain excess moisture, and set aside. Heat up a cup of the already-cooked brown rice and season with soy sauce, as little or as much as you like, then put the spinach on top of the rice. Drizzle spinach with sesame oil to taste (a little goes a long way). If you’re like me, you might even put that bottle of Sriracha sauce on the counter next to your bowl, and add liberally.

Voila. Instant pick-me-up. What is your favorite, quick comfort food?

    egg and soldiers!!

    I feel that it’s okay, it has protein (which not enough females have in their diet, and on Oprah they said “the day you don’t eat protein is the day you get a wrinkle.”), and good cholesterol and carbs…

    And who doesn’t love dunking the little soldiers in the yolk? x

    Whazza soldier? I love eating eggs, and if the King of Everything had his druthers, eggs would be just about all he’d eat.

    Haha soldiers are when you cut the bread up into strips, straight as soldiers =P

    And dunk them into the soft boiled egg.

    Yum!!

    We eat eggs nearly every day to! But they are good for you, so it isn’t as bad as the ‘nuggets phase’ last year!!

    duh. can you tell i’m stupid tired?

    I get eggs laid by hens fed a rich Omega3 diet. And I try to eat one every day. LOL. guess I should have my cholesterol levels checked.

    Eggs have only good cholesterol, so don’t worry! :) We eat them all the time, too.

    My favorite quick meal is always in teh pantry waiting to be cooked: Tuna Linguine with Olives and Capers. Boil some pasta and while it cooks, saute garlic, rosemary, olives (any kind as long as they’re jarred and not canned), capers, a can of tuna and some lemon or orannge zest in plenty of olive oil. Add some zucchini strips or snap peas if you have them and toss with the pasta. It’s a bit salty, with savory and fruity undertones. Comes together in a snap and tastes wonderful.

    cause tonight is pizza and a movie night at a friend’s house. Dontchaknow?
